Warm Eggplant Salad

Medium : 1Hr : 1 Meal


1/2 Eggplant, Spring Mix, Wallnuts, Maple Syrup, Blood Orange, Dressing (mine = orange, miso, ginger, rice vinegar).


Cut the eggplant into strips, salt heavily and let sit for 30mins. Wash thououghly and squeeze all the water out. Toss in pan with oil for 10-15mins.

Heat pan with a dash of maple syrup on low, toss in wallnuts, stir continuously until dried and coated in maple sugar. For the dressing: juice 1/2 an orange, finlely grate a small nub of ginger. Mix with white miso paste, rice vinegar. Slice blood orange and remove peel.


Top lettuce with eggplant, candied wallnuts, blood orange. Serve with dressing on the side.
