1 Lg Onion, 3 Cloves Garlic, 2 Sprigs Thyme, Glass of Wine, 1pt Beef Broth, 2 Slices Bread, small chunk Guyere Cheese, Apple Cider Vinegar
Slice the onion into 1/4in strips, coarsely chop garlic. Pour yourself a glass of wine, drink half of it. Dice or grate cheese. Sautee the onions in butter on med/low until carmelized, approx 1.5hrs.
Add garlic, wine, simmer 5 mins. Add beef broth, cook until reduces. Add a little apple cider vinegar. Rip up one slice of bread, add to soup. Add water to thin if necessary. Salt and Pepper to taste.
Pour soup into bowl, top with cheese and freshly grated pepper. Serve with remaining slice of bread.
