Wood Ear Mushroom Salad

Ingredients

Fresh Wood Ear Mushroom, Cilantro, Scallion, Serrano, Dried Chili, Sesame Oil, Chinkiang Vinegar, Sichuan Peppercorn Oil.

Preparation

Boil wood ear mushrooms 3-4 mins, rinse in cold water. Chop finely scallion greens into strips, whites into disks. Mix dressing of vinegar, oils, toss with mushrooms, scallion whites.

Presentation

Plate with scallion greens, dried chilis.
