Kulajda

Ingredients: Chanterelle, crimini, porcini, onion, garlic, dill, broth, yogurt, butter, flour, cream, majoram, allspice, fennel, cider vinegar.

Preparation: Make roux of butter, flour, cream. Add broth, herbs, spices. Add mushrooms, and simmer until cooked. Finish by stirring in heated yogurt, vinegar.

Plating: Serve topped with majoram, pan-fried chanterelle.
