Omlette

Ingredients: Egg, Butter, Salt, Scallion, Chilli

Preparation: Whisk eggs, salt briskly in bowl with chopsticks. Add to warm buttered pan, agitate vigorously with chopsticks until small curds congeal. Spread uniformly, and roll up.

Plating: Plate with thinly sliced scallion, dried chillis and flaky salt.
